Happy Easter: Leftover Ham Recipies

I hope everyone has a safe and happy easter with family and friends. For everyone who is doing up a ham this year unless you send the leftovers home with your guests, or you have teenage boys in the house, you’re going to have leftovers.

Leftover ham is one of my favorites! Here are some of the awesome things I do with my leftover ham.

Omelets

Leftover ham is great in an egg omelet with green onion and cheddar cheese! Just cube it up and add it as a filling, you could even add some potato cubes.

Eggs benedict is also a favorite with leftover ham!

Scalloped or Augratin Potatoes

A great way to use leftover ham is cubed in scalloped or au gratin potatoes. I love to cube ham and potatos and fry them up in a skillet like a hash. You could even add onions and green pepper and serve over scrambled eggs for a skillet breakfast!

Sandwiches

Ham sandwiches are a given, but why not spice them up on the grill. Add a fancy cheese like gruyère or bree and press them in the panini press for a warm and melty delicious lunch!

Grilled ham and cheese with soup is always a favorite at my house and don’t forget those egg and ham breakfast sandwiches on english muffins or bagels.

Casseroles

I throw all kinds of leftovers into a casserole. Ham is no exception, it’s great in a mac and cheese, broccoli and ham, or ham and potato casserole.

Beans

Don’t forget those beans! These are a favorite in my house, with the hock from that bone in ham. Soak dry pinto beans in water over night and toss them in the crock pot with the ham hock, onion and garlic, and slow cook all day. Serve with corn bread or flour tortillas.

Pizza

Slice the ham really thin and add it as a topping to a pizza crust with your favorite veggies. If you have leftover pineapple add some of that too!

Ham is very versatile and can be used in so many dishes, you can top salads and add it to soups, or you can just snack on it as is like we do at my house.
